This is an absolutely fantastic addition to any meal involving turkey or ham. The combination of onions and cranberries is really lovely.
Heat a skillet over medium, and add a very small amount of olive oil or butter.
Thinly slice a red onion (or white, if you can’t get reds at a decent price), and add it to the pan. Stir occasionally, letting the onions soften and begin to brown a bit, but not reaching a caramelized point.
Add a can of whole-berry cranberry sauce, and stir it in well. Let the onion/berry gunge simmer for a minute or two, then set it aside to cool. Add a dash of salt to enhance the flavors.
Serve it hot, warm, or cold with roasted turkey or ham (as a relish), or spread it on turkey or ham sandwiches for a set of flavors that will make your mouth hum. I like it best on toasted turkey and cheese sandwiches, or on a turkey bagel sandwich with cream cheese.
