Quick update: I made a batch of granola today, subbing Agave Nectar for the honey as the sweet in the basic ratio.
This batch used
- a bit of peanut butter in with oil as the fat
- raw cashew pieces and sunflower seeds
- mix-ins of dried cranberries, raisins (pleh), little bits of dried date, and a sprinkling of coconut.
It’s Really Good.
Agave Nectar has a very low glycemic index, so it’s great for lower-carbs, but it’s not an artificial sweet like the really processed stuff. It has a slight vanilla undertone to it all alone, so boosting the vanilla a bit, and mixed with the cinnamon, it’s lovely.
I’m thinking I may need to get some marshmallows, and take this from healthy to Sinful Chewy Granola Bars at some point.
